We've got a dehydrator, too. I use it a lot for drying tomatoes and herbs. Love it!
I think I'm looking forward to your trip almost as much as you are... 8)

Have fun! I'm jealous! Also, you can make kale chips in your dehydrator. Take out the big veins and toss the kale leaves with a tiny bit of olive oil, then sprinkle with sea salt. You won't have them for long, they're addictive!
